Parsnips
Harvest and availability:
British parsnips are available for 11 months of the year with new season crop being available from July. Just like carrots this means that parsnips are seldom imported which makes them very eco-friendly.

Interesting facts:
- Parsnips unique flavour develops when its starch content changes to sugar. This process begins to happen after the first frost, when the vegetable is still in the ground!
- People that are allergic to walnuts, parsley and figs may be allergic to parsnips. Typical signs of parsnip allergy are swelling of lips and a burning sensation in the throat.
- Parsnips contain many B-complex groups of vitamins such as folic acid. Folic acid is an extremely important vitamin for a pregnant woman because it ensures the healthy development of the babies’ spinal cord.
